Mexican Bean Burgers

Description

These Mexican bean burgers are a healthy, vegan alternative to classic burgers. Serve them with a salad or grilled veggies for a dinnertime fiesta!

Ingredients

One 15-ounce can kidney beans
1⁄2 cup green bell pepper, chopped
1⁄2 cup onion, chopped
2 cups salsa
1 cup dried bread crumbs
1⁄2 cup whole wheat flour
Salt (to taste)
Black pepper (to taste)
1 pinch chili powder
Flour (optional for a firmer texture)
Cooking spray

Instructions

  1. In a large bowl, mash the beans and mix in the green pepper, onion, salsa, bread crumbs and flour. Season with salt, pepper and chili powder. (For a firmer mixture, you can add flour; to soften, you can add more salsa.)
  2. Form the mixture into patties. Coat a large skillet with cooking spray and place over medium-high heat. Cook the patties for about 8 minutes on each side, or until browned and firm.

Notes

  • If you prefer, you can bake the patties. Preheat the oven to 425 degrees F and place the patties on a greased baking sheet. Cook for about 15 minutes.
