Baked Lemon Chicken

Description

Lemons are high in vitamin C, which helps boost the immune system and keep skin looking healthy. Increase your intake with this baked lemon chicken.

Ingredients

1⁄4 teaspoon salt
1⁄4 teaspoon pepper
1 1⁄2 cloves garlic, thinly sliced
4 fresh thyme sprigs (or 1 teaspoon dried thyme)
3 1⁄2 pounds chicken, skinned and cut into 10 pieces
3 cups onion, thinly sliced
1 1⁄2 cups chicken stock (or water)
Juice from 1 lemon
1 lemon, seeded, sliced into 10 slices

Instructions

  1. Combine the salt, pepper, garlic and thyme.
  2. Lay the chicken pieces in a 11x13-inch baking pan. Sprinkle the seasonings over the chicken.
  3. Combine the onion, stock and lemon juice in a saucepan. Heat to a boil. Pour the hot lemon mixture over the chicken. Top each chicken piece with a lemon slice.
  4. Bake for 30 minutes at 400 degrees F, until golden brown and juices are clear in color.
