Almond-Crusted Tilapia

Description

Tilapia is high in omega-3 fatty acids, protein and other nutrients. With a rich nutty flavor, this almond-crusted tilapia is sure to be a hit.

Ingredients

1⁄4 cup whole, natural almonds
2 tablespoons dry bread crumbs
1 teaspoon garlic and herb seasoning (salt free)
1⁄8 teaspoon pepper (freshly ground, if desired)
1 tablespoon canola oil
1 tablespoon Dijon mustard
Two 6-ounch tilapia fillets
Parsley (for garnish, optional)

Instructions

  1. Place the first 4 ingredients in a blender or food processor; process for 45 seconds or until finely ground. Transfer the crumb mixture to a shallow dish.
  2. Heat oil in a large nonstick skillet over medium heat. Brush mustard over both sides of the fillets; dredge in the crumb mixture. Place fish on the pan; cook 3 minutes on each side, until the fish flakes easily when tested with a fork or reaches the desired degree of doneness. Sprinkle with parsley, if desired.
