Thai Chili Shrimp Salad

Description

Shrimp is high in lean protein and relatively low in calories. This light and healthy Thai chili shrimp salad is perfect on summer nights.

Ingredients

2 teaspoons mayonnaise
1 teaspoon Thai sweet chili sauce
1⁄8 teaspoon Sriracha chili sauce
1⁄4 cup fresh snow peas
2 1⁄2 cups romaine lettuce, chopped
1 tablespoon carrots, shredded
1 tablespoon celery, chopped
4 ounces shrimp, cooked
1 tablespoon fresh green onions, chopped
3 tomato halves

Instructions

  1. Dressing: Mix together the mayonnaise, Thai sweet chili sauce and Sriracha.
  2. Salad: Blanch the peas in boiling water for 1 minute; drain and shock in ice cold water.
  3. Place lettuce on a plate and top with the pea pods, carrots and celery. Toss the shrimp with 1 tablespoon of the sweet chili mayonnaise mixture until coated and place on top of the salad. Garnish with green onions and tomato halves.

Notes

  • You can either use precooked shrimp or bake raw shrimp in the oven at 350 degrees F for about 10 minutes; then cool.
