1⁄2 pound ground beef
1⁄2 cup onion, chopped
One 16-ounce can tomatoes
One 6-ounce can tomato paste
1 tablespoon fresh or dried parsley
1 1⁄2 cups water
1 teaspoon fresh or powdered garlic
2 cups egg noodles, cooked
3⁄4 cup low-fat cottage cheese
1⁄4 cup Parmesan cheese
- In a frying pan, cook the beef and onion until the beef is brown and the onion is tender. Drain off the excess fat.
- Add the tomatoes, tomato paste, parsley, water and garlic to the beef mixture. Bring to a boil and simmer until the sauce is thick, about 25 minutes.
- Add the cooked, drained noodles to the beef mixture. Stir to prevent sticking. Mix cheeses and drop by spoonfuls into the pan. Cover and heat over low heat for about 5 minutes.
- Refrigerate leftovers.
