Quick Skillet Lasagna


Craving lasagna but don’t have time to make it? Try this American favorite without the hassle of a traditional recipe.


1⁄2 pound ground beef
1⁄2 cup onion, chopped
One 16-ounce can tomatoes
One 6-ounce can tomato paste
1 tablespoon fresh or dried parsley
1 1⁄2 cups water
1 teaspoon fresh or powdered garlic
2 cups egg noodles, cooked
3⁄4 cup low-fat cottage cheese
1⁄4 cup Parmesan cheese


  1. In a frying pan, cook the beef and onion until the beef is brown and the onion is tender. Drain off the excess fat.
  2. Add the tomatoes, tomato paste, parsley, water and garlic to the beef mixture. Bring to a boil and simmer until the sauce is thick, about 25 minutes.
  3. Add the cooked, drained noodles to the beef mixture. Stir to prevent sticking. Mix cheeses and drop by spoonfuls into the pan. Cover and heat over low heat for about 5 minutes.


  • Refrigerate leftovers.
