Greek Salad

Description

Mix, toss, serve. This Greek salad is super easy to make. And it has enough protein, vitamins and minerals to get you through the day.

Ingredients

1 tablespoon olive oil
1 tablespoon balsamic vinegar
Spring mix salad (2 to 3 large handfuls)
4 ounces chicken breast (grilled, broiled or baked; chilled and diced)
1⁄4 cup cucumber, sliced
1⁄4 cup feta cheese
8 Greek olives, pitted
4 slices red onion (add more or less according to taste)

Instructions

  1. In a small bowl, whisk together the oil and vinegar.
  2. In a salad bowl, toss together the rest of the ingredients. Drizzle the dressing over the salad; toss evenly to coat. Serve.
