Grandma Calella's Meatballs

Description

When you’re craving Italian, there’s nothing like hand-rolled meatballs like Grandma used to make, served with homemade marinara. Buon appetito!

Ingredients

4 large eggs
1 teaspoon salt (to taste)
1 teaspoon ground black pepper
3⁄4 teaspoon garlic powder (not garlic salt!)
1⁄4 cup Italian parsley
1⁄2 cup Italian cheese, freshly grated (Romano and/or parmesan)
1 pound ground beef (for a lighter alternative, may substitute ground turkey)
1⁄4 cup plain bread crumbs

Instructions

  1. Crack the eggs into a mixing bowl and whip up with salt, pepper, garlic, parsley and cheese.
  2. Add the beef and mix thoroughly with your hands, adding the bread crumbs a little at a time. Let the mixture sit in the fridge for at least 30 minutes.
  3. Preheat the oven to 350 degrees F. Using your palms, roll the mixture into 1 1/2- to 2-inch tight rounds and place them, well-spaced, on a baking tray. Bake for about 12 minutes, turning them once, until you see the egg slightly bubbling from the tops.
  4. Add them directly to a pot of homemade marinara and let them simmer all day.
