- Preheat oven to 350 degrees F. Grease the bottom and sides of a loaf pan and set aside.
- In a bowl, sift and mix all the dry ingredients together. Stir in the orange zest. Make a well and one by one, add the orange juice, eggs, butter and oil. Stirring from the center, gently continue mixing (be sure not to overmix). Add the cranberries and walnuts and continue mixing.
- Transfer the batter into the prepared loaf pan. Bake for 45 to 50 minutes or until a skewer inserted into the middle of the loaf comes out clean. Let cool in the pan for 5 to 10 minutes and remove. Transfer loaf to a wire rack. Serve.
