Made with apples and celery, this delicious Waldorf salad is chock-full of fiber, antioxidants and vitamin K. Healthy can taste good!

1⁄3 cup low-fat mayonnaise
1⁄3 cup nonfat or low-fat plain yogurt
2 teaspoons lemon Juice
1⁄4 teaspoon salt
3 cups cooked chicken breast, chopped
1 medium red apple, diced
1 cup red or green grapes, halved
1 cup celery, sliced
1⁄2 cup chopped walnuts, (toasted if desired)
- Whisk mayonnaise, yogurt, lemon juice and salt in a large bowl. Add chicken, apple, grapes, celery and half of the walnuts. Stir to coat well. Top with the remaining walnuts.
