Who needs bread? These savory chicken lettuce wraps are a refreshing way to pack in a healthy dose of your daily vegetables.
1 tablespoon coconut oil
2 tablespoons garlic, minced
1 tablespoon ginger, minced
4 scallions (both the white and green parts), chopped
1 pound ground chicken (alternatives: ground bison or ground turkey)
One 8-ounce can water chestnuts, drained, rinsed and chopped
1 red bell pepper, finely chopped
1⁄4 cup rice vinegar
1 large head butter lettuce, washed, dried and leaves separated
Sesame oil (and/or soy sauce)
- Heat coconut oil in a large pan over medium-high heat, and sauté the garlic, ginger and scallions for a few minutes. Add in the chicken (or other meat) and cook until meat is browned.
- Add in the water chestnuts, bell pepper and rice vinegar. Cook until the pepper is soft. Keep warm.
- Spoon about 1/3 cup of chicken filling onto each lettuce leaf; drizzle with sesame oil and/or soy sauce and roll it up.
