Bean and Chicken Sausage Stew

Description

When it’s cold outside, warm up with this heart-healthy one-pot meal. It’s easy to make and all comes together in just 20 minutes.

Ingredients

1 tablespoon olive oil
One 12-ounce package fully cooked chicken sausage links, sliced
2 cloves garlic, thinly sliced
One 19-ounce can cannellini beans, rinsed
1 can low-sodium chicken broth
One 14.5-ounce can diced tomatoes (including juice)
1 bunch kale leaves, torn into 2-inch pieces
¼ teaspoon kosher salt (to liking)
¼ teaspoon black pepper (to liking)
1 loaf country bread (optional)

Instructions

  1. Heat the olive oil in a large saucepan or Dutch oven over medium heat. Add the sausage and cook, stirring once, until browned, 2 to 3 minutes.
  2. Stir in the garlic and cook for 2 minutes more. Add the beans, broth and tomatoes and bring to a boil. Add the kale, salt and pepper. Simmer, stirring occasionally, until wilted, 2 to 3 minutes.
  3. Serve with bread.
