Balsamic Roast

Description

Wow your family with this hearty, fall-apart roast prepared right in your slow cooker! Just throw it together in the morning, come home and enjoy.

Ingredients

Seasonings for rub: salt, paprika, garlic powder, onion powder, black pepper
2 pounds top round beef, chuck or any roast
2 tablespoons coconut oil
1 large sweet onion, sliced
1⁄2 cup balsamic vinegar
8 ounces tomato sauce
1⁄2 cup water
White wine to taste

Instructions

  1. Season the roast generously on both sides with the spices listed above. Heat coconut oil in a large pan over medium-high heat and sear each side of the roast for 3 to 4 minutes.
  2. Place sliced onions in the bottom of the slow cooker and top with seared meat.
  3. Combine the balsamic vinegar and tomato sauce in a bowl, mix well and pour over the meat. Add water and white wine to the slow cooker as well. Cover with the lid, set to low and cook for 6 to 8 hours.
