2 sweet potatoes
1⁄3 cup coconut oil
1⁄4 cup almond butter
- Peel and cut sweet potatoes into 1/4-inch fries. Coat in melted coconut oil.
- Place almond butter in a large microwave-safe bowl and cook on high at 30-second intervals until melted. Place sweet potatoes into bowl, coating each fry with the nut butter. Season with sea salt.
- Roast in oven for 45 minutes at 400 degrees F.
