Spanish Rice


The perfect complement to Mexican food — or anything, really! Try this Spanish rice for a quick and easy-to-make side dish at dinner!

2 tablespoons vegetable oil
1⁄2 cup green pepper, chopped
1⁄2 cup onion, chopped
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon ground red pepper
1⁄2 teaspoon salt
1⁄8 teaspoon black pepper
1 cup rice (uncooked)
One 15.5-ounce can chopped tomatoes, undrained
2 cups water


  1. Brown green pepper and onion in oil until tender.
  2. Stir in the spices, rice, tomatoes and water. Cover and cook over low heat for 20 minutes or until rice is done.
