Mango Salsa


This fruity salsa adds a refreshing touch to a variety of dishes, from Caribbean BBQ chicken to fish. Or, serve it alone with a basket of chips.

2 cups mango, chopped
1 cup cucumber, chopped
1 cup cherry tomatoes, chopped
1⁄4 cup cilantro leaves
1 jalapeno, seeded and minced
2 tablespoons lime juice
1⁄4 teaspoon kosher salt


  1. Pulse all ingredients in a food processor until minced.
