Chicken Lettuce Wraps

Description

Who needs bread? These savory chicken lettuce wraps are a refreshing way to pack in a healthy dose of your daily vegetables.

Ingredients

1 tablespoon coconut oil
2 tablespoons garlic, minced
1 tablespoon ginger, minced
4 scallions (both the white and green parts), chopped
1 pound ground chicken (alternatives: ground bison or ground turkey)
One 8-ounce can water chestnuts, drained, rinsed and chopped
1 red bell pepper, finely chopped
1⁄4 cup rice vinegar
1 large head butter lettuce, washed, dried and leaves separated
Sesame oil (and/or soy sauce)

Instructions

  1. Heat coconut oil in a large pan over medium-high heat, and sauté the garlic, ginger and scallions for a few minutes. Add in the chicken (or other meat) and cook until meat is browned.
  2. Add in the water chestnuts, bell pepper and rice vinegar. Cook until the pepper is soft. Keep warm.
  3. Spoon about 1/3 cup of chicken filling onto each lettuce leaf; drizzle with sesame oil and/or soy sauce and roll it up.
