Gazpacho

Description

Made from tomatoes and other vegetables, gazpacho is a healthy soup, served chilled, that’s quite refreshing on those hot, summer days.

Ingredients

5 hearty tomatoes, chopped
2 red bell peppers, seeded and chopped
1 jalapeño, seeded and chopped
1 cucumber, peeled and chopped
1 small red onion, chopped
3 cloves garlic, minced
1⁄3 cup olive oil
1 slice day-old bread, crust removed
3 tablespoons sherry vinegar
1 avocado, thinly sliced (optional)

Instructions

  1. Blend all ingredients except the avocado. Season as needed. Chill for a few hours.
  2. Use avocado for garnish. Serve in a bowl with croutons (or even in a glass for a fast meal)!
