Mediterranean Quinoa Salad

Description

With a mild, nutty flavor, quinoa is packed with nutrients and goes with just about anything. This delicious quinoa salad won’t disappoint!

Ingredients

1 1⁄2 cups low-sodium chicken broth or vegetable broth
1 cup quinoa
1 can garbanzo beans, drained (no added salt)
1⁄2 large red onion, diced
1 large bell pepper
1 cup grape tomatoes, halved
1⁄2 cup feta cheese
1⁄4 cup fresh parsley, chopped
1⁄4 cup fresh chives, chopped
1 tablespoon minced garlic
1⁄4 cup juice of 1 to 2 lemons
2 tablespoons balsamic vinegar
1⁄4 cup olive oil
Pepper to taste

Instructions

  1. In a saucepan, bring the broth and quinoa to a boil. Reduce heat to medium low, cover, and simmer until the quinoa is tender and the liquid has been absorbed (15 to 20 minutes).
  2. Scoop the quinoa into a large bowl. Gently stir in the garbanzo beans, onion, bell pepper, tomatoes, feta cheese, parsley, chives and garlic. Drizzle with lemon juice, balsamic vinegar and olive oil. Stir until evenly mixed and add pepper to taste. Serve warm or refrigerate and serve cold.

Notes

  • If you buy quinoa in bulk, you may need to rinse it with water before cooking to remove the bitter flavor.
