Anise Biscotti

Description

Made from the anise plant, aniseed has a sweet taste, similar to licorice. Flavorful and crunchy, anise biscotti are the perfect complement to coffee.

Ingredients

1 tablespoon butter or margarine
1⁄4 cup sugar
2 egg whites, lightly beaten
1 1⁄4 teaspoons anise extract
1 cup all-purpose flour
1⁄2 teaspoon baking powder
1⁄8 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees F. Combine butter and sugar, mixing thoroughly; mix in egg whites and anise extract.
  2. In another bowl, combine the remaining ingredients. Add to first mixture, stirring until well blended.
  3. Gently knead the dough on a lightly floured surface. Shape into a long roll, place on a greased baking sheet and flatten to about 1 1/2 inches thick.
  4. Bake for 15 minutes. Place on a wire rack and let cool for 8 to 10 minutes. Cut roll into 1/2-inch diagonal slices and place on a baking sheet. Bake for 5 minutes. Turn cookies over and bake an additional 10 minutes. Place on wire rack and let cool completely (cookies will harden).
